Time Out!

Thank you, friends and family, for all the support you have provided me while starting up my cupcake business. It has been a blast! However, I will be taking a short break and focusing my efforts in a different place. Keep your fingers crossed for me and hopefully I will announce my other project later in 2012. HAPPY NEW YEAR!!

Chocolate Peanut Butter Cupcakes


The wonderful treats are in my top five! The cake is a rich devil's food and the frosting is a peanut butter buttercream. The top is sprinkled with cocoa powder and chopped peanuts. Sweet and salty is always a good combination!

Halloween Cupcakes


Two of my favorite things.... Halloween and Cupcakes! So thankfully my apartment complex asked me to donate some treats and I found it as the perfect opportunity to test out some new recipes! 

Ghosts: Red velvet cakes with whipped sugar frosting. This was the first time I tried this frosting and it tasted like a creamy, vanilla marshmallow (but vegetarian friendly). I will totally be using that again! Plus, I kept thinking of my friend Karen, who loves red velvet cake but hates cream cheese frosting. So I decided to ditch the cream cheese for these.

Grave Stones: Strawberry cake with chocolate ganache frosting (chocolate cookie crumbs for the dirt and sugar cookies for the stones). It was also my first time making strawberry cake and it was delicious! Especially with chocolate frosting. One lesson learned though.... sugar cookies suck a TON of moisture out of the cake. I ended up with soft cookies and dry cake :( but they still tasted pretty good!

Sprinkled Cakes: Pumpkin cake with vanilla cream cheese frosting. I love spice cakes (well let's be honest.... I don't discriminate against any cake), and this one was very moist. It just got better with a smooth, creamy frosting! Sorry Karen.... I had to put cream cheese on one flavor :)

Baking is always a good reason to delay cleaning house and other lame chores on a Sunday :) Don't you agree?

Cupcake Extravaganza!


I'm sure everyone was sitting on pins and needles waiting for the next update, so I apologize for the delay; sadly my actual job has put cupcake making on the back burner.
Here are some pictures from the weekend cupcake extravaganza! I have never made or decorated so many cupcakes in my life, but it was a blast! They were lemon poppy seed with raspberry cream cheese frosting... yummy :)

   - Lemon poppy seed cake
   - Raspberry cream cheese frosting
   - Edible pearls and raspberry sugar for decoration

Description:
   This was my second attempt at these this week. I first used a muffin type recipe, but it was WAY to dry. I also used fresh raspberries to make the frosting which I did not realize was a bad idea until I was about to make it. The second round (pictured above) turned out very delicious! Both the cake and frosting have a sweet flavor and a tart flavor. If you are in the Fort Collins area, stop by and eat one!

Green Tea Cupcakes


Details:
   - Matcha green tea cake
   - Matcha green tea buttercream frosting

Description:
   Wade is not big on sweets unless they involve green tea, so he has been wanting me to make these forever! This was my first try at green tea cupcakes and I used the Matcha green tea powder from whole foods which was already sweetened. The cake was not very flavorful and I had to add so much powder to the frosting, that it turned out a little grainy. They still taste pretty good; you are your own worst critic! Wade is happy and I cant wait to make them again and improve my recipe!

Custom Grooms Cake (Inter Milan Soccer Jersey)


Details:
   - Red velvet cake
   - Buttercream frosting
   - Rolled fondant

Description:
     Wade and I made this cake for Jodi D. as a surprise for her husband on their wedding day. This cake required a ton of fondant for all the details. Being my suborn self and going against all the advice I have received, I made all of the fondant from scratch and created the color using gel food coloring. It took forever and the cost (time and sore forearms) of making it from scratch did not out weigh the benefit. I learned my lesson for sure! Jodi and Josh are such a fun loving pair and I'm so excited for them!
